I’m Now Enjoying a Hybrid Vegetarian-Vegan Diet, EVERYDAY! ☺️

Hello World! Despite being totally BLIND as a third disability, as a lifelong scientist with minimal skills in FOOD SCIENCE, my digestive system is surely reaping the Health BENEFITS! ☺️

Yesterday was my mother-in-law’s birthday, and instead of eating any meats/poultry nor pancit (Filipino dish meaning “fried noodles”), I opted for Garden Special pizza from Yello Cab Pizza Company. Since it is currently the Roman Catholic “Lent” season, the order line tried selling me two pizzas, but I just accepted the single 9in one. ☺️ My wife ate a slice whereas I ate most of the remaining, leaving a slice for someone else in my household. Yes, I can consume an entire vegetarian pizza all by myself, but if I were to do that, I would be guilty of overeating, which would go against my health plan. ☺️

My initial introduction to vegetarianism happen sometime in July or August 2021, when I tried Veggie Lover’s pizza from Pizza Hut (Philippines), and my wife was surprised of the fact, I ENJOYED consuming my first vegetarian pizza! ☺️

Now for the veganism part… ☺️ My wife now knows where to purchase vegan hamburger patties, vegan sausages, vegan meatballs and vegan chicken nuggets! ☺️ My wife located a retailer that sells vegan cheese, but they were already sold-out before my wife arrived in the store. My wife is presently unable to locate where to purchase vegan bread, but she is also having her female officemate with an automobile to do the searching. ☺️

Daily, for my breakfast, I have two cheeseburgers made with vegan burger patties, dairy cheese, and standard burger buns. Optionally, my sister-in-law sometimes has bacon, and prepares me exactly the serving size listed on the package. Since I’m still a little hungry after consuming two cheeseburgers, my wife also oven-bakes two or three preformed hash-browns (potatoes) for me. If hash-browns are not available, my wife will cook vegan chicken nuggets for me. ☺️

For my lunch and/or dinner, my wife will prepare me three vegan sausage hotdogs with standard buns, or two vegan meatball sandwiches with dairy cheese and standard burger or hotdog bun.

My daily standard snack or “dessert” are dry-roasted peanuts. My wife had discovered where to purchase dry-roasted peanuts without monosodium glutamate (MSG/betsin) and/or without any salt. She also found where to purchase my favorite brand, Planter’s, which are more expensive because they are imported into the Philippines. Because the Philippines Bureau of Customs does not store imported peanuts in an air conditioned environment, the country’s humidity makes dry-roasted peanuts feel greasy; at first, I thought the Planter’s packaging was mislabeled, but, as an American citizen, I know Planter’s don’t mislabel their products. ☺️

And then, my standard drink is cold, freshly-brewed, unsweetened green tea with ginger root. My wife and/or her sister boils the Manila Water’s tap water for pouring into two stainless metal containers, each having one green-tea bag and a small chunk of ginger root. After 15 minutes, the tea bags are removed. When the hot liquid cools down enough to not burn anyone’s fingers, the liquid is then poured into former soda-pop plastic bottles, either 1.5l or 2l in size. My wife’s nephew, a 21 year-old boy, uses an eco-bag to carry the tea bottles upstairs to my air conditioned bedroom, for my consumption. I typically have many bottles, up to eight bottles of tea, on the floor next to my “man cave” wall-mounted desk/table. I usually keep one bottle on my table for pouring into my ceramic mug, which is really a coffee mug, but I don’t drink coffee! ☺️

The results of my ongoing food science experiments… The first experiences I am having, has to do with my digestive system, such as no more constipation, yet flatulence increases whenever I consume too many vegan food products. I had already experienced three days of flatulence without any defecation, yet I was not experiencing any bloating or abdominal discomfort. My second experience, is with my mental health, in terms of anxiety REDUCTION, in which LOUD animal noises are no longer triggering any anxiety conditions. As my blindness is a stress-related illness, from surviving four consecutive years of domestic terrorism beyond my family’s control, my scientific theory is, my eyesight will slowly return if I can keep my anxiety levels under constant control; this is the reason why I launched my hybrid vegetarian-vegan diet in the first place! ☺️

Additionally, for those that have been liking my Food Science posts, and I’m very thankful for the Likes, I’m almost 52 years, and had been a meat-eater from age 7 to 51 without consuming any vegetables. Because I’m totally BLIND with minimal taste buds, it has become easier for me to consume vegetables, including vegan food products! ☺️
